These sandwiches are a huge part of my childhood. Most festivals and fairs served them. And my Mom often took them to family picnics and church potlucks. I think they are an Ohio thing. Growing up, they were made with a canned whole chicken. After we moved to Illinois, I couldn’t even find such a thing in the grocery store here. I tried making it with several little cans of canned chicken breast, but it just wasn’t the same. Once I discovered the recipe for Easy Shredded Chicken, it was simple to come up with an updated recipe for these sandwiches. And honestly, this is a much healthier version since I’m sure there was a ton of salt in the canned whole chicken.

3 – 4 cups Easy Shredded Chicken
12 – 15 Ritz Crackers, crushed
1/2 – 1 teaspoon freshly ground black pepper, to taste
- Warm the shredded chicken in a medium saucepan over medium heat.
- Add the Ritz crackers and the pepper. Stir all the ingredients together.
- Pile the chicken on fresh buns and serve warm. This is often served with bread and butter pickles on the side. Enjoy!
