A super easy slow cooker recipe for all-purpose shredded chicken! This chicken is seasoned and slowly cooked all day. When it’s ready, use in any of your favorite tacos, sandwiches, or casseroles. Or, you can freeze it to use for later! Some ideas are Chicken, Bacon, and Cheddar Spaghetti Casserole or Shredded Chicken Sandwiches.
3 pounds boneless, skinless chicken breasts (about 4 large)
1 cup low-sodium chicken broth (preferably homemade)
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 medium onion
3 cloves of garlic
1 large carrot, halved
- Peel the onion. Leave the root end intact. Cut the onion in half through the root end. This will keep the onion together so it can be removed after the chicken is cooked. Peel the garlic cloves and lightly smash them. Again, you want them to remain intact so you can remove them after the chicken is finished cooking.
- Place uncooked chicken breasts, onions, garlic, and carrot in a crockpot. Add the salt and pepper to the chicken broth and pour the broth over the chicken. Cook on low for 6-8 hours or high for 3-4 hours.
- Remove the onion, carrot, and garlic cloves from the slow cooker. Shred the chicken with two forks and let it soak up the remaining juices in the slow cooker. Use the chicken right away in your favorite recipes. Or allow the chicken to cool and portion into containers. The chicken will keep in the refrigerator for 4 to 5 days or freeze for up to two months.
