Gremolata is an Italian condiment that can be sprinkled on almost anything including hummus, pizza, pasta, and soup. It can be made by hand; just be sure everything is finely chopped. You can also make it in a food processor, especially if you need a lot.
1 bunch fresh parsley leaves (about 1 cup loosely packed)
1 garlic clove, finely grated or crushed
zest of 1 lemon
- Rinse and dry the parsley. Be sure you only have the leaves and the tender part of the stems. You don’t want any stalks. Make sure the leaves are completely dry before you begin chopping them as finely as you can. Transfer to a bowl.
- Add the finely grated garlic and the lemon zest to the parsley. Mix everything until it is well combined. Store in an airtight container in the fridge for up to one week.
